The best recipe for fluffy pancakes

This recipe is for two people, so do not hesitate to adapt the proportions according to the number of guests. You can also, according to your taste, flavor your pancake batter with orange blossom water, rum or even Grand-Marnier. To make this pancake batter recipe you will need:

100g of flour

30g melted butter

20 cl of milk

2 eggs

2 tablespoons brown cane sugar or brown sugar

1 teaspoon vanilla extract or liquid vanilla

1 pinch of salt or fine salt

1. In a large bowl or salad bowl, whisk together the eggs and brown sugar. Add the liquid vanilla and mix. Add the flour, pinch of salt and melted butter, and whisk. Gradually add the milk while whisking. Let the dough rest in the refrigerator for 1 hour.

2. Heat your crepe maker and grease it with a cotton ball soaked in oil. Pour a ladle of batter into the crepe maker. Wait until the edges of the crepe are colored before removing it with a spatula, and once it has come away from the crepe maker, flip it over and cook for another minute or so.

3. Continue cooking the pancakes until the batter is used up, then garnish them with sugar, jam, chocolate spread, caramel: don’t curb your gourmet imagination. Good tasting !
