gluten-free recipe from “Wonders”
Here’s how to cook gluten-free Mardi Gras Wonders. An easy and quick recipe to prepare these little Carnival donuts. Here, rice flour and starch are supplemented with millet flour. Millet flour is particularly rich in protein, phosphorus, zinc and magnesium. It has a little nutty taste and brings a beautiful golden color to the Wonders.
The frying oil used is neutral grapeseed oil. Be careful, as with any frying, small crumbs of batter can darken the oil, so it is recommended to choose a simple and clean cookie cutter for the “wonders”.
Ingredients :
90 g semi-complete rice flour (+1 teaspoon to flour the sheet of baking paper when rolling out the dough).
110g cornstarch (or potato starch)
50g millet flour
¾ teaspoon xanthan gum
½ teaspoon baking powder
1 pinch of fine salt
2 eggs
60g powdered brown cane sugar
60 g melted unsalted butter
1 tablespoon of rum or orange blossom water)
½ teaspoon of vanilla extract
1 liter frying oil (I chose grapeseed oil)

Preparation :
Prepare a large pot with the oil and a dish covered with absorbent paper. Mix together in a large bowl, the dry ingredients: flour, starch, xanthan gum, baking powder, fine salt and sugar. Add the eggs, melted butter and rum. Use a silicone spatula to incorporate the ingredients together. The paste is thick and smells like rum.
Roll out the dough with a rolling pin between: a sheet of lightly floured baking paper (below) and a sheet of cling film (above). The cooling film sheet makes it easy to roll out the gluten-free dough without it sticking or tearing Put the rolled out dough for 1 hour in the refrigerator. Then cut out the little wonders with a cookie cutter. If you cut them in the shape of a triangle, make a slit in the center to let the oil pass during cooking and thus cook the inside of the Wonders.

Heat the oil in a large Dutch oven. The oil temperature should reach 170°C/180°C (use a jam thermometer to check the oil temperature). Plunge a few Wonders into the oil, then turn them using a slotted spoon so that they are golden brown on both sides. Be careful, it only takes a few minutes, so watch the color carefully.
Remove them from the oil and place them directly on the dish covered with absorbent paper to soak up a little frying oil. Continue cooking the other Wonders in the same way. Arrange them in a presentation dish and sprinkle them with icing sugar.
