Our tips for making homemade waffles
Undisputed star of Mardi Gras, the waffle pleases young and old alike. If you have already mastered the art of waffle batter, here are some tips to make them even better, crispy on the outside and fluffy on the inside!
Successful waffles: watch out for the milk!
Want a tip? The whole secret of a successful waffle and crispiness lies in the choice of ingredients for make waffle batter. Slightly different from that of pancakes, the waffle dough is just as easy to do. We advise you to combine the following ingredients: flour, sugar, butter, eggs, yeast, salt, oil and milk. The latter should be used in moderation, since the creamy consistency of the milk will often make your waffles too soft. So, if you want crispy waffles, we don’t recommend having a heavy hand on the milk! To do this, don’t hesitate to replace the milk with water or beer, which will act as natural yeast in the waffle dough !

The trick of egg whites for crispy waffles
Other tip for crispy waffles : incorporate into your dough some stiffly beaten egg whites ! To do this, be sure to separate the yolks from the whites. Once the preparation with the yolks is finished, incorporate the whipped egg whites at the very end. Your waffles will be more airy, lighter and crispier!
Puffy dough, successful waffles!
One of the keys to obtaining a crispy result, to rise the waffle dough ! For this, provide either baking powder (count 10 g for 500 g of flour) – the rest will be 30 minutes to 1 hour. You can also use baker’s yeast. Only downside, it will be necessary to plan a longer rest time: count about 2 hours. Last tip, for crispy waffles – previously mentioned: do not hesitate to add to your waffle dough beer that will act as natural yeast!
