Eggplant fritters recipe

EGGPLANT FRITTERS RECIPE
For 6 persons
Ingredients :
For the eggplant fritters:
– 2 eggplants
– 1 CAC of zaatar
– 100g of flour
– 2 beaten eggs
– 100 g of breadcrumbs
– Frying oil
For the sauce:
– 200g cottage cheese
– 1 tsp of mustard
– 1 tsp chopped cilantro
– 1 minced garlic clove
– 1 CASE of olive oil
Preparation :
1. Cut the aubergines into slices about 2 cm thick. Place them on a baking sheet lined with baking paper.
2. Sprinkle the eggplant slices with zaatar then bake for 10 minutes at 180°C. Let cool.
3. Meanwhile, combine all the ingredients for the sauce. To book.
4. Roll the eggplant slices in the flour then in the beaten eggs and finally in the breadcrumbs. Cook them in very hot frying oil for 2 to 3 minutes. Donuts should be golden brown.
5. Enjoy the eggplant fritters by dipping them in the sauce.
